Olive Salad for Muffaletta Sandwiches

We really had the “muffuletta” experience when we visited New Orleans for a national basketball tournament. The cuisine in this city is amazing anyway, but if you love olives and good bread, you’ll really enjoy the muffaletta sandwich comprised of cold cuts, sliced cheese, Sicilian bread and olive salad. This olive salad is also a wonderful accompaniment for grilled meats.

INGREDIENTS
1 cup chopped pimiento-stuffed green olives
1/2 cup chopped pitted Kalamata olives
1/2 cup pickled pearl onions, chopped (see recipe below)
2 tablespoons capers, drained
1/2 cup chopped marinated artichoke hearts
2 tablespoons chopped sun-dried tomatoes
packed in olive oil and drained
1/4 cup chopped mild pepperoncini
1 tablespoon virgin olive oil
1/2 teaspoon freshly ground pepper

DIRECTIONS
Mix all and store in airtight container. Can be stored for several weeks in the refrigerator.
